THE TERRITORY

Alba is part of the Langhe, a region in the Lower Piedmont located between the provinces of Cuneo and Asti. It consists of an extensive hilly system that ranges from areas with altitudes generally below 600 meters, where wines and truffles reign supreme, to areas with altitudes of up to 896 meters, dominated by forests and the cultivation of the prized “Tonda Gentile Trilobata delle Langhe” hazelnut variety. Tartufi al Massimo offers true virtual journeys through these places, which provide such a wealth of gastronomic treasures that evoke stories, curiosities, anecdotes, and legends from an ancient tradition that remains relevant among the “Genti di Langa” in a region now declared a UNESCO World Heritage Site.

PAIRINGS

White Truffle is considered the “King” of the table. Its unmistakable, satisfying, and exciting flavor and aroma, unique in its kind, pair perfectly with traditional dishes like tajarin, “Fassona” tartare, or a simple fried egg. Black Truffle is excellent in stuffed pastas, omelets, risottos, soups, and adds a special touch to canapés and bruschettas. The products, on the other hand, are excellent as a condiment for any type of pasta or risotto, ideal for seasoning any first course, to enhance any type of meat or fish, or even just to make an omelet special. These dishes are further enhanced when accompanied by our famous local wines such as Barbera, Nebbiolo, and Barolo. It’s a pasta suitable for being dressed with typical Tuscan game ragù in particular.

LOCAL CUISINE

The cuisine of Alba can satisfy all tastes and the most refined palates with typical Langhe tradition dishes:

The classic and famous “tajarin,” egg-based pasta similar to tagliatelle but thinner with a cut width of 2/3 mm, prepared with lots of eggs that make them as yellow as the sun. The hand-cut “Fassona” raw meat (Fassona is a prized beef breed raised in Piedmont and cut by hand to preserve its excellent qualities). These traditional dishes pair wonderfully with the king of the Langhe land, “Truffle.” The “Tonda Gentile Trilobata delle Langhe” hazelnut, known as the “queen” of hazelnuts. It can be enjoyed as a fruit, processed into Gianduja Cream or the typical Hazelnut Cake, to be enjoyed as is or accompanied by cream or zabaione (a typical Piedmontese custard made with egg yolk, sugar, Marsala, or another sweet liqueur).
