I am Antonio, a farmer from Suvereto and the founder of Azienda Agricola Pietrasca. My passion for the land has led me to create high-quality extra virgin olive oils and flours from ancient grains, cultivated with respect for nature.
My farm was officially established in 1996, but its roots run deep in my family’s winemaking tradition. Today, I cultivate 26 hectares, strictly following the principles of Organic Agriculture because I believe in a sustainable and authentic way of farming. I named my oils after my daughters, Tosca and Iole, as a testament to the bond between my family and my work. Every drop tells a story of passion, dedication, and love for this land. Anyone who visits us can experience something unique, discovering the value of agriculture that respects both nature and Tuscan tradition.

Sogno di Tosca – Monovarietal Frantoio.
An oil obtained exclusively from Frantoio olives, characterized by balanced smoothness and a refined aromatic profile. On the nose, delicate notes of sweet almond and aromatic herbs emerge, with hints of walnut and ripe tomato. On the palate, it stands out for its elegance: sweet on entry, with a slight bitterness and moderate spiciness. The fruitiness is clean and slightly herbaceous, with hints of sweet artichoke and ripe tomato.
Allegria di Iole – Monovarietal Ravece.
Obtained from the prized Ravece cultivar, this oil is distinguished by its intense and fresh olfactory profile. On the nose, green scents of freshly cut grass, tomato, and wild greens stand out, enriched by elegant citrus and balsamic notes. The bouquet is completed with hints of artichoke, almond, and aromatic herbs. On the palate, it presents itself as bold, with a lively entrance characterized by a marked bitterness and persistent spiciness, typical of this variety.

LOCAL CUISINE
One of the most exquisite dishes of our tradition is “Gnocchi with Hare Ragù,” a dish that perfectly embodies the essence of Tuscan cuisine. The hare, with its wild and robust flavor, pairs perfectly with the sweetness of homemade gnocchi, creating a balanced taste that delights the palate.
The hare is an animal that roams the countryside around Suvereto, and its meat has always been appreciated for its unique flavor. To prepare the ragù, adult hare is used, marinated for several hours in red wine, aromatic herbs, and spices. The marinade serves to tenderize the meat and infuse it with a rich aroma.
After marination, the hare is slow-cooked for several hours with peeled tomatoes, carrots, celery, and onion. The gnocchi used for this dish are usually homemade, prepared with fresh potatoes and soft wheat flour.
We recommend pairing this dish with a full-bodied red wine, such as a Bolgheri, to further enhance the flavors of the hare and the ragù.
